Ingredients
8 large eggs
1 lb tomatoes, sliced
1 small onion, chopped
1 tsp cumin
1 tsp paprika
2 tbsp olive oil
1/4 cup baby spinach, chopped
1 clove of garlic, minced
salt and pepper
Method
Preheat oven to 400 degrees.
In a large oven safe skillet, add the olive oil and saute the onion until golden, about 7-8 minutes.
Add the garlic, cumin, paprika, salt and pepper to taste, and cook for 1 minute.
Add the tomatoes and roast in the oven for 10 minutes.
Remove skillet from the oven, stir mixture, make 8 wells in the mixture and crack 1 egg into each well.
Return skillet to oven and bake until desired firmness, about 7-8 minutes for runny yolks.
Remove from oven, top with spinach, and serve hot.
NOTE: Always be careful with a skillet that you’re placing in and out of the oven, don’t forget your oven mitts.
