Ingredients
1 lb ground chicken
3/4 cup panko bread crumbs
1 large egg
2 green onions, thinly sliced
1/2 tsp onion powder
1/2 tsp garlic powder
1 cup Sweet Baby Rays Buffalo Wing Sauce
Method
Preheat oven to 400 degrees and line a baking sheet with parchment paper.
In the bowl of a stand mixer, with the paddle attachment, add the chicken, egg, panko, onion, and spices.
Mix on low speed until well combined.
Roll mixture into 1-inch meatballs and place on the baking sheet. You should have 30-36 meatballs when finished.
Bake for 6-8 minutes, until golden brown.
Transfer to a slow cooker and add the buffalo wing sauce.
Cook on low at least 2 hours.
Serve with ranch, blue cheese, celery, and carrots, if desired.
