Ingredients
1 lb ground Italian sausage
1 onion, diced
2 stalks celery, diced
2 carrots, diced
4 cloves garlic, minced
1 tsp kosher salt and black pepper
1/3 cup dry white wine
15 oz can diced tomatoes
8 cups chicken broth
1 tsp basil, oregano, and parsley
3 cups kale, chopped
1 lb fresh torttellini
grated Parmesan
Method
In a large skillet over medium high heat, cook the sausage until no longer pink.
Add the onion and celery and cook for 4 minutes.
Add the garlic, salt, and black pepper, and cook for an additional 2 minutes.
Add the white wine and cook until evaporated.
Transfer mixture to a slow cooker.
Add the carrots, tomatoes, chicken broth, basil, oregano, and parsley. Stir well.
Cook on low for 3 hours.
Add the tortellini and kale to the slow cooker and cook for an additional 30 minutes.
Serve in bowls with grated Parmesan.
