Ingredients
1 lb ground beef
1 onion, finely diced
1 -2 jalapenos, seeded and minced
32 oz Velveeta cheese, cubed
20 oz Rotel tomatoes & chilis
2 tbsp taco seasoning
2/3 cup water
Method
In a large skillet brown the ground beef and onion over medium heat until beef is no longer pink, drain if necessary.
Add the jalapenos, water, and taco seasoning and mix well.
Increase to medium high heat and cook until liquid has evaporated.
Pour meat mixture into a crock pot, add the Velveeta and Rotel and mix.
Cook on low until cheese is completely melted, about 2 hours.
Keep crock pot on warm and serve with chips.
