This delicious spinach and white bean soup is the perfect dish for a cold winter’s day. Its creamy texture and hearty flavor make it a comforting meal that is sure to please. To make it, start by sautéing onion, celery and garlic in olive oil until softened. Add chicken broth, spinach, and white beans and bring to a boil. Simmer , stirring occasionally, until the beans are tender. Finish off the soup with a sprinkle of freshly grated parmesan cheese. Serve hot with crusty bread and enjoy!
Ingredients
1tbsp Olive oil
3 Cloves of minced garlic
1 Onion, diced
1/2tsp Thyme
1/2tsp Oregano
4 Cups Vegetable or chicken stock
1 Cup uncooked orzo, or other small pasta
2 Cups baby spinach
1 15oz can of cannellini beans, drained and rinsed
2tbsp Fresh parsley, chopped
Kosher salt and ground black pepper
Method
Heat oil in large pot and saute onion for 2-3 minutes, add garlic and saute another minute. Add thyme and oregano.
Pour in stock and add 1 cup of water. Bring to a boil.
Stir in the orzo and cook for about 10 minutes, until tender, not al dente.
Add the spinach and cannellini beans, and cook until spinach is softened, about 2-3 minutes.
Add the parsley, and salt and pepper to taste, and serve.
