Steak Milanese is an Italian dish made with a thin cut of beef, usually round steak, pounded out until it is very thin. Ingredients
4 4oz cube steaks, pounded to 1/4 inch thickness
1/2 cup flour
3 eggs
1 1/2 cups panko bread crumbs
1/2 cup grated parmesan
2 tbsp cup chopped basil
1 cup olive oil
1 tsp lemon juice
salt and pepper
Method
Place flour on a large plate.
In a large bowl, beat the eggs until smooth.
Combine panko, Parmesan, lemon juice, basil, salt, and pepper in a shallow dish.
Season steaks with salt and pepper.
Dredge steaks in flour, egg, letting excess drip off, and finally bread crumb mixture until coated nicely. transfer to a baking sheet after coating.
Place a wire rack in another baking to place steak on after cooking. You can place paper towels under the rack to catch and oil.
Heat oil in a skillet, that will fit 2 steaks at a time, over medium-high heat until very hot.
Place 2 steaks in the skillet and cook until golden, 2 minutes per side. Transfer to wire rack and repeat with remaining 2 steaks, bringing oil back to a high heat if necessary.
Serve steaks with pasta, your favorite red sauce, lemon butter, or topped with tomatoes.
