Ingredients
1 cup uncooked rice
4 green peppers, halved and seeded
1 1/2 lbs ground beef
1 onion, diced
2 cloves of garlic, chopped
15 oz can of tomato sauce
2 cups shredded mozzarella
Method
Preheat oven to 350 degrees
Prepare rice according to instructions.
In a saucepan, bring water to a boil, add peppers, and simmer, covered, for 10 minutes.
In a large skillet, brown the ground beef, drain and return to skillet.
Add the onion, rice, garlic and tomato sauce to the browned beef, combine and simmer for 10 minutes. Salt and pepper to taste.
In a baking dish arrange the peppers and then top with the meat mixture.
Bake for 40-50 minutes, until tops are browned.
Remove peppers from the oven, top with the mozzarella, and bake an additional 5-10 minutes.
Remove and serve.
