Ingredients
8 oz vegetable broth
8 oz cannellini or navy beans, rinsed
14.5 oz can of diced tomatoes
5 tsp minced garlic
1 tbsp oregano
10 oz frozen cheese tortellini
3 cups of water
1/2 cup grated parmesan cheese
2 tbsp parsley
Method
In a large soup pot combine tomatoes with their juices, beans, vegetable broth, garlic, oregano, and water.
Bring to a soft boil and simmer for 5 minutes.
Add the tortellini and cook until for 10 minutes.
