Ingredients
2 10oz packages of cheese tortellini
12 cups chicken broth
2 cloves of minced garlic
2 tbsp parsley
2 stalks of celery, chopped
1 small onion, chopped
1 carrot, chopped
3 tbsp butter
freshly grated parmesan cheese
Method
Melt butter in a large pot and saute garlic, carrot, onion, and celery over medium-low heat for 10 minutes.
Add the chicken broth and water and bring to a boil.
Add the tortellini and cook for 20 minutes or until tender.
Stir in parsley, cook an additional 10 minutes, then serve with parmesan.
