Tuscan Grilled Pork Ribs are an Italian classic. The combination of herbs and spices used in the sauce give the ribs a unique flavor, making them unforgettable. The texture of the ribs is tender and juicy, while the char from the grill adds an extra layer of flavor. When served, the ribs are often accompanied by a side of roasted potatoes or a salad. Note: You can add any type of sauce you like once finished or just eat them as is. I have included a lemon and rosemary vinegrette.
Ingredients
2 racks of St. Louis Spareribs
1 tbsp olive oil
kosher salt
pepper
1/4 cup olive oil
2 cloves of garlic, minced
1 tsp rosemary
2 tbsp lemon juice
Method
Remove the membrane for the back of the racks and cut ribs into 2 piece sections.
Rubs ribs on both sides with kosher salt. Set on a wire rack, and let stand for 30-45 minutes.
Heat your grill to medium-high heat, about 15 minutes.
Brush ribs with the 1 tbsp of olive oil and season with pepper.
Place ribs meat side down and grill, covered, until browned, about 5-6 minutes.
Flip ribs and grill, covered, an addition 5-6 minutes.
Flip ribs and finish grilling, 5-6 additional minutes, until ribs reach 175-180 degrees.
Transfer to a cutting board, let rest for 10-15 minutes, and then cut into single rib pieces.
While resting, combine the 1/4 cup of olive oil, garlic, and rosemary in a small sauce pan.
Turn stove to medium, bring contents to a simmer, and simmer for 1 minute.
Remove from heat, stir in the lemon juice, and serve with the ribs.
