Ingredients
6 cups chicken broth
2 9oz packages of frozen cheese tortellini
1 tbsp olive oil
1 onion diced
3 cloves of minced garlic
1 28oz can of crushed tomatoes
1 15oz can of cannellini beans, drained
6 oz baby spinach, torn into large pieces
1 tsp crushed red pepper flakes
fine sea salt
black pepper
grated parmesan cheese
Method
In a large pot heat the olive oil over medium heat.
Add the onion and saute for 8 minutes, until soft and golden.
Add the garlic and saute for 1 minute.
Add the chicken broth, tomatoes, crushed red pepper, and salt and pepper to taste.
Bring to a boil, add the tortellini and reduce heat to medium-low and simmer 20 minutes.
Add the beans and spinach and simmer an additional 3 minutes.
Serve with Parmesan and a good Italian crusty bread.
