Ingredients
2 zucchini
1 clove garlic, minced
2 tbsp butter
2 tbsp olive oil
1 tsp thyme or basil
1 tbsp parsley
salt and pepper
lemon juice (optional)
Method
Slice the zucchini into long ribbons 1/16 inches thick using a mandoline or potato peeler.
In a large skillet over medium-high heat add the olive oil and melt the butter.
Add the garlic and the zucchini and toss to coat.
Cook, stirring often, until softened, about 4-5 minutes.
Add the spices, a tbsp of lemon juice if desired, and salt and pepper to taste and serve.
